Ingredients:
- 4 eggs
- 2 tablespoons of hot water
- 110 g of flour
- 40 grams of cornstarch
- 120 g of sugar
- 1 pinch of salt
- 1 teaspoon of chemical yeast
Preparation:
1. To make the cake, we separate the yolks and the clear ones. Beat the yolks with a couple of tablespoons of water and when foam add 2/3 of the sugar and continue beating until you get a consistent cream.
2. On the other hand, we assemble the snow plows with a pinch of salt, when they are practically assembled we will add the third of the sugar we have left and finish mounting until they form peaks.
3. Pour 1/3 of the plain over the yolks and mix gently, with surrounding motions, then pour the remaining 2/3rds of the plain and on top pour the flour, cornstarch, yeast (previously combined and sifted), blend gently with manual rods and with surrounding motions backside to top, trying no longer to drop the milkshake.
4. Once everything is well mixed, pour into a 26cm round (previously greased and flourished), smooth the surface and bake in a preheated oven at 180° for 20 minutes.
5. We insert a needle in the center and if it comes out dry, we take it out of the oven and leave it for 5 minutes in the mold, then we dismold it and place it on a grid to cool it.
6. Once it's cold, it's ready to be layered.
